Pefect Beef Pot Roast

Yum yum yum. The picture is not very pretty, but boy is it tasty. Here is the recipe if you would like to try it.
Serves 6| Hands-On Time: 20m | Total Time: 8hr 00m
Ingredients
- 1/4 cup tomato paste
- 2 tablespoons cornstarch
- 1 pound carrots—peeled, cut into 2-inch pieces, and halved lengthwise if thick
- 1 pound baby potatoes (about 15)
- 1 medium onion, cut into 1/2-inch wedges (root end left intact)
- 2 stalks celery, cut into 1-inch pieces
- 2 bay leaves
- 1 3-pound beef chuck roast, tied
- kosher salt and black pepper
- 1 tablespoon chopped fresh flat leafed parsley
Directions
- In a 4- to 6-quart slow cooker, whisk together the tomato paste, cornstarch, and 1 cup water. Add the carrots, potatoes, onion, celery, and bay leaves and toss to combine. Season the beef with 1½ teaspoons salt and ½ teaspoon pepper and set on top of the vegetables.
- Cover and cook until tender, on low for 7 to 8 hours or on high for 4 to 5 hours (this will shorten total recipe time). Let the meat rest for 10 minutes before discarding the kitchen twine and slicing the meat across the grain. Serve with the vegetables and cooking liquid and sprinkle with the parsley.

Chicken Enchiladas-
Diced chicken
cheddar cheese
green enchilada sauce
cream of chicken soup
sour cream
milk
flour tortillas
shallots
Lemon Chicken--Where its at(:
1) Make sure to defrost your chicken for 5-6 minutes.
2) After defrosting, place your chicken on the grill.
3) When on the grill, put your choice of seasoning on the chicken while it cooks.
4) When the chicken starts to look fully cooked, squirt some lemon juice onto the chicken..this will help the flavor stay on the chicken while it finishes cooking.
5) After the chicken is done cooking, place more lemon juice to give it more flavor!
*An option is also to keep putting lemon juice on your chicken while it cooks entirely.

Cooked Veggies! (:
I cooked carrots, and broccoli, very simple thing to do!
First the carrots, cut them up in fine pieces, or leave them at a small size, next you will place them in a pot of boiling water, then cover the pot and wait for steam to produce. After steam rises, see if you can place a fork through the carrot easily and smoothly, if so then they are cooked.

Food
Boil around 6 eggs or as many as you want
after they finish cooling cut in half and take out yolks and put them in a bowl and mash with a fork then mix in mayo, pickle relish, and dry mustard to taste and fill the eggs with the yummy filling.
Potato Salad
6 to 8 yukon gold potatoes cut in chunks in cook
4 to 5 hard boiled eggs, dieced
1 to 2 sliced scallons
1/2 cup of mayo
couple squirts of mustards
sweet pickle relish
salt and pepper
mix together in bowl and there you go

Egg-tastic Recipies
Egg Salad Sandwich:
3 boiled eggs
1/2 cup chopped tomato
1/4 cup chopped red onion
1 avacado

Spinach leaves
DRESSING:
1 tbsp. mayonnaise
1 tbsp. sour cream
1/2 tbsp. fresh lemon juice
1/4 tsp. salt
1. Mix dressing ingredients
2. Chop eggs, avacado, onion, and tomato and combine in a large bowl
3. Add dressing and stir gently so everything is evenly coated
4. Refrigerate for 1 hour
5. Spred on desired bread and add spinach leaves
With this recipe you finish one of your cooked eggs and a salad. Bonus!
Spinach, Ham, & Cheese Omlete:
2 eggs
2 tbsp. water
1 tsp. butter
1/4 cup shredded cheese
1/4 cup baby spinach
1/4 cup finely chopped ham
3 boiled eggs
1/2 cup chopped tomato
1/4 cup chopped red onion

1 tbsp. sour cream
1/2 tbsp. fresh lemon juice

2. Melt butter in a pan or skillet on medium-high heat and tilt the pan to coat the bottom
3. Pour in egg. Continually push the outside edges of egg toward the center and tilt the pan so that the uncooked egg will reach the outter hot surface of the pan.
4. When the liquid egg is cooked, top one half of the egg with cheese, spinach and ham then fold the omelet over.

Soy Glazed Salmon
I made Soy Glazed Salmon and boy was it yummy. My parents were very impressed. :) We had lemonade, cooked vegetables, and wild rice. I set the table and everything came out perfect and was finished in just an hour! Boo yah! Here's the recipe:
Preheat oven to 450 degrees.
Mix in a bowl:
1/4 cup olive oil
1/4 cup brown sugar
3 T. soy sauce
2 T. fresh lemon juice
2 T. dry white wine (or water)
Salt and pepper the filets. Place in a oven proof baking dish. Pour the glaze over the top. Turn the filets to coat all sides. Place in hot oven and bake for 15-20 minutes or until salmon is opaque but still bright pink inside. Baste a few times while baking. Serve with lemon wedges if desired.

Homemade Vanilla Ice Cream
On Monday, September 19,2011 I made Homeade Vanilla Ice cream and topped it with cherries.


Simple Vanilla Ice Cream
Recipe:
for use in a Cuisinart Automatic ice cream maker
2 Cups heavy cream, chilled
1 Cup whole milk, chilled
3/4 Cup sugar
1 teaspoon vanilla extract
Place ingredients in a medium mixing bowl and combine until well blended. Pour into ice cream freezer bowl, turn the machine ON and let mix until mixture thickens, about 20-25 minutes. If desired, transfer ice cream to an airtight container and place in freezer until firm, about 2 hours.

Pork and Mashed Potatoes

Recipe
Pork:
season about 1/2-1 C. of flour with garlic and paprika, salt and pepper
dredge pork or cubed pork into the flour
fry pork in vegetable oil.

Creamless Corn Chowder
A few weeks ago I saw this recipe in the Sunday paper. It's a soup chocked full of fresh vegetables (new potatoes, red bell pepper, cilantro, olathe corn on the cob, and onion), so I decided to try it. (I'm always trying to get my family to eat more vegetables!)
As you can see, I had the heat up too high on the onions, so I scrapped them and started over, but after that, all seemed to go well enough. I had one taster, other than me, that approved of the final result (thanks, Zach!).

For this years Young Women in Excellence we are learning the art of cooking. To kick off our project we made artichoke dip and homemade corn chips. They were very good!
